In the middle of the seventeenth century, Sadayuki Matsudaira, the load of the Matsuyama clan, brought back the Holland-origin cake from Nagasaki. Citron, a Shikoku product, is kneaded into bean jam and wrapped with wet sponge cake. Although this cake is a compromise between the Japanese and Western styles, it contains no oil and grease but tastes slightly sweet. Tart which was a tea cake secretly hidden by the Matsuyama clan because of its elegant taste.

At the Saihoji Temple in Matsuyama City, there are old Thin Indian Ink cherry trees. Thin Indian Ink Sweet Jelly of Beans was made in association with these cherry trees. Dark green of tea and white beans regarded as cherry blossom leaves make a beautiful combination. It looks like a cherry blossom on a leaf or cherry blossoms in darkness. Decent sweetness and slight tea flavor are getting popular favor.

In the age of Genroku (300 years ago), soy rice cakes were made in merchant's home and samurai houses of Matsuyama for the Feast of the Peach. Originally, there were only brown rice cakes made of rice poweder and soy sauce. Presently, there are colorfull rice cakes using tea and edible red. Soy rice cakes supported by people living around the Matsuyama castle are the country confectionary native to Matsuyama.
