Young Radish Kimchi
Summer is the season when they usually make young radish kimchi. The green kimchi itself
can let many people to forget the hot weather. For making summer kimchi, better grinding
the chili yourself than using pre-ground red chili.
Materials(makes for four) and Precooking
|| clean and cut into 5 to 6cm (2 to 2 1/3 inch) pieces. Salt lightly and rinse.
leek, young scallion
|| clean and wash. Cut into 3 to 4cm (1 1/5 to 1 1/2 inch) pieces.
|| gather up the solid part and mince.
garlic and ginger
|| clean and wash. Mince.
- Some of the materials and most of the wares actually needed are not included in the
materials list, assuming they are readily available in any home.
- Metric values are approximated into pounds and inches, as they are not absolutes.
- Seasoning; Grind red chili yourself, or prepare pre-ground red chili. Mix it into flour paste.
Knead in minced garlic, ginger, shrimp juice and salt.
- Mix the seasoning with leek, scallion, young radish. Ferment in a pot.
