Kimchi Grilled with Ground Bean



Ground bean paste is one of favorite Korean food in the wintertime. Broth is the most usual dish. Strictly speaking, the paste means the remnant in the bean curd making process. Most of the time, we boil beans and grind them to make more tasty and nutritious paste. The paste goes well with pork, too. A very nutritious dish can be made by grilling the paste with green beansprouts and pork, complete with over-fermented winter kimchi.



Materials(makes for four) and Precooking


5 cups white beans
1/2 head Chinese Cabbage Kimchi
1/2 cups uncooked rice
100g (0.2 pounds) pork
50g (0.1 pound) each green beansprouts and fernsprouts
2 each green chili, red chili
1 sheath scallion
@ kimchi flavorings
1 teaspoon sesame seed oil
a small amount of roasted sesame seeds
@ pork flavorings
1 teaspoon minced scallion
1/2 teaspoon minced garlic
a small amount of ginger and salt
@ green beansprout flavorings
1 teaspoon minced scallion
1/2 teaspoon minced garlic
a small amount of ginger and salt
beans and rice wash and let sit in water for a while. Grind in an electric mixer to make thick paste.
cabbage kimchi clean the leaves of stuffing. Cut into 1cm (1/2 inch) squares.
fernsprouts clean and cut into 3cm (1 inch) pieces.
green beansprouts remove heads and wash. Squeeze well and cut into small pieces.
pork slice into pieces that are the same in the size with kimchi pieces.
scallion, green chili and red chili cut into pieces at slanted angles.
  1. Some of the materials and most of the wares actually needed are not included in the materials list, assuming they are readily available in any home.
  2. Metric values are approximated into pounds and inches, as they are not absolutes.

Cooking
  1. Flavor kimchi with roasted sesame seeds and sesame seed oil. Flavor minced pork with minced scallion, garlic, ginger and salt. Flavor green beansprouts and fernsprouts with minced scallion, garlic, salt, roasted sesame seeds and sesame seed oil.
  2. Mix the flavored kimchi, pork and sprouts well with the bean and rice paste to make thick dough.
  3. Apply oil to a pan and heat. Place a spoonful of dough in the pan when it is hot. Spread evenly in a round shape.
  4. Decorate the dough with sliced chilies and cook until the dough turns yellow.
