Colorful kimchi
Kimchi wears its colorful look sometime after the middle of the Chosen
Dynasty. It was clean-cut and simple until then.
Quality radish and
Chinese cabbage came to take the place of the
base vegetables, and the use of hot chili made it
possible to add materials like fish juice to
kimchi. Adding seasoning such as chili, scallion,
garlic and ginger
to the simple pickle of kimchi along with various fish juice and seafoods
resulted in the kimchi which is quite close to that of today. It also led to
the many varieties.
Not much has changed since. We can say that the modern kimchi
reached its completion at this time. The only change is adding more
items such as fruits, meat and pine nuts to suit individual taste.
