Kimchi in modern dietary culture



Kimchi has a long history and takes up an important part of the tradition in Korea. But how about today? Does it still stay at the same, important place?

In the old times a major part of eating food was to ease the hunger and feel satisfied. Now people came to be health-conscious and enjoy food more than just simple stuffing, thanks to much higher income. Science has revealed the chemical composition of food, and nutritious elements' effects to human body became known to us.

As Korean People become more aware of nutritional physiology, meat is being less demanded the consumption of vegetable is increasing. Kimchi consumption is also on the increasing side, with its nutritional value being re-evaluated. Previously, bap (boiled rice) with kimchi was considered the bare basic menu. But now it is being re-evaluated also as a kind of health food.

Thus kimchi holds an unshakable place in Korean cultural heritage which we can not turn away from, no matter how much Korean dining table is flooded with Western style food.
