The Kimchies in this province taste similar to those of the Seoul, Kyonggi, and Choongchong. Shrimp or clam juice give unique flavor. And aromatic flavor is added with plants like gosu(a kind of dropwort) and bundi (a fruit). Dongchimi (Radich Liquid Kimchi), Pumpkin Pickle Kimchi, gosu Kimchi, and Bossam Kimchi are the most famous. Especially Pumpkin Pickle Kimchi, which is made of yellow-ripe pumpkin and radish leaves with dried cabbage, is that which characterize the Kimchi in this region.
