The Cholla Province is famous for the most tasty and diverse dishes, and many of them are hot and salty. There are, too, many kinds of fish juice including yellow corvenia, pilchard and harvest fish. Sometimes Kimchi is flavored with sesame seeds and cinnamon powder for unique, somewhat bitter, taste. It looks a little dark for the generous amount of the added fish juice but the savor remains longer. Various vegetables are used together. Leaf Mustard Kimchi and Godeulbaegi Kimchi are the most famous varieties. Godeulbaegi Kimchi, especially, also works as a good appetizer with its unique aroma and flavor. Godeulbaegi is a kind of vegetable with a bitter taste. The bitterness is taken out by steeping in salted water to be added with fish juice and ground chili.
