Dried Radish Kimchi



Radish is sliced into strips and dried in fall to make a kind of food item called dried radish. The dried radish is then mixed with seasoning to make a salad when the winter kimchi stock is almost used up. The winter dise dish is chewed lumpy.



Materials(makes for four) and Precooking


3 cups dried radish
1 cup chili leaf, dried
1/2 cup ground extra-glutinous rice
2 cups water
1/2 syrup
1 cup anchovy juice
1/2 ground red chili
2 bulbs garlic
1 chunk ginger
a small amount of sesame seeds
a small amount of salt
dried radish, chili leaves soak in water for 2 or 3 hours. Wash clean and squeeze out water.
paste cook the extra-glutinous rice flour as you cook flour paste.
anchovy juice boil together with the same amount of water. Remove the solid parts with a fine strainer when boiled.
garlic and ginger clean and wash. Mince.
  1. Some of the materials and most of the wares actually needed are not included in the materials list, assuming they are readily available in any home.
  2. Metric values are approximated into pounds and inches, as they are not absolutes.

Cooking
  1. Boil the rice paste with syrup to make a thick paste. Let cool.
  2. Seasoning; Soak ground red chili in the anchovy juice. Mix it well with the paste to make .
  3. Add dried radish and chili leaves to the seasoning. Add minced garlic and ginger, too. Knead well, flavoring with salt. Scatter sesame seeds over it and let ferment.
