Combining the seafood of the South Choongchong Province and the
vegetables of the North, the dishes in the region are characterized by
their simple and unsophisticated taste. They usually apply
salt without
fish juice in the Kimchi of the
region. Fermented chili,
dropwort or other seaweeds
can be added. Sometimes mushrooms, pears, and chestnuts are also
included in the seasoning for a hint of their flavors.
