Cucumber Liquid Kimchi



Cucumber liquid kimchi is a kimchi especially for summer season. The cucmber's fresh flavor will stimulate your appetite. Add cooked rice or noodles to the liquid part and you have a special dish.



Materials(makes for four) and Precooking


6 cucumbers
1 radish
60g (0.13 pounds) dropwort
1 bulb garlic
1 chunk ginger
5 red chilies
6 sheaths young scallion
a small amount of salt, flour
cucumber wash clean and cut into 3cm (1 1/5 inch) cylinders. Cut deep into one ends in the shape of a cross, without parting completely.
radish clean and wash. Cut into 3cm (1 1/5 inch) pieces.
young scallion, dropwort clean and wash. Cut into 3cm (1 1/5 inch) pieces.
red chili remove the seeds and slice into fine strips.
garlic and ginger clean and wash. Mince.
sauce add 3 spoons of flour to 6 cups of water. Bring to boil. Let cool. Flavor with salt.
  1. Some of the materials and most of the wares actually needed are not included in the materials list, assuming they are readily available in any home.
  2. Metric values are approximated into pounds and inches, as they are not absolutes.

Cooking
  1. Dip the cucumber pieces in salted water. Wrap with clean towel and weight with something heavy to squeeze out water.
  2. Seasoning; Mix radish strips, young scallion, dropwort, minced garlic, ginger, and red chili together. Flavor with salt.
  3. Stuff the seasoning in the slits of the cucumber pieces and pile neatly in a pot. Pour in the sauce.
