From young to aged

Dutch Gouda and Edam have a unique quality - they cabn be eaten at different ages. Like good wines they ripen and change in structure and flavour through time. In Holland the following ages are distinguished:

Young 4 weeks old
Semi matured 8 weeks old
Mature 4 months old
Extra Mature 7 months old
Aged 10 months old

Ask your cheesemonger's advice when buying cheese.
