Nutritional value

One kilo of Gouda contains about 250gm proteins, 300gm fat and 440gm water. Cheese also contains the vitamins A, B and D, as well as minerals important to our bodies such as phosphorus and calcium. Vitamin D and calcium help to keep our bones from decalcification, an ailment especially prevelent in old age and often the cause of fractures. 100gm of cheese a day is sufficient for our daily intake of this mineral. 70gm cheese contains approximately the same amount of proteins as 100gm meat. Cheese is easily digestible as the proteins and fats have been partially decomposed by bacteria during production.
