Okonomiyaki (Hiroshima)

Okonomiyaki is real Hiroshima taste, a favorite food of "Hiroshimaites" from of old.
Recently, marketed as a frozen food sold throughout Japan its popularity is rising.
The Hiroshima style Okonomiyaki has been known to the people before the war as "penny western food". The process of subsequent modifications led to its current form.


Preparation 1. Mix wheat flower with water and spread on a hot iron plate to bake something resembling a crepe.
2. Heap dried bonito fish, cabbage, bean sprouts, pork, squid, shrimps etc. on this piece of crepe.
3. Add "soba" or "udon" according to preferences and turn it over.
4. When it is well done, paste it with plenty of a special sauce.

Special sauce This special sauce gives the recipe its soft but aromatic taste when it is finished. It has been brought to completion by keeping salt and sour taste low.

Okonomi mura (the Okonomi village)

One Building in central Hiroshima is called the Okonomi mura. It allows very carefree visits to experience this great food and has a very good reputation among tourists.
Currently, it is not only available in Hiroshima, but thanks to its being sold as frozen food can be purchased in supermarkets in Osaka, at JR stations or on airports, where it is rapidly developing into a tourist souvenir.
