Japan is the leading "Mushroom Kingdom" of the world. At the height of autumn,we can enjoy mushrooming. Why don't you go around the mountains and fields in the suburbs or your home town and gather and taste mushrooms for yourself?
Though there are various recipes and ways of cooking mushrooms, let's try to cook mushroom in soups and casseroles. This way is the most rustic. Cook gathered mushrooms together with taro, leeks and fried bean curd. Flavor with miso or soy sauce as you like. Before long a casserole will be filled with the aroma and flavor of various mushrooms. In this casserole, we have 'Hokoritake' mushrooms, 'Kabentake' mushrooms, a clump of 'Iguchi' mushrooms and 'Hatsutake' mushrooms.
Incidentally, a traditional bamboo basket is most suitable for mushrooming. In a vinyl bag, mushrooms grow musty, spoil easily, and spores don't spread. With a bamboo basket, spores scatter from the basket and the mushrooms are encouraged to breed. One thing must be mentioned. Please go mushrooming together with people who know a lot about mushrooms, because it is fairly difficult to distinguish edible mushrooms from poisonous ones.
