Ripe Papayas

Eat your papayas ripe, or take the green ones and make the classic Thai dish, som tom! Som tom is often served on street corners, made with a mortar and pestle to pound the green papaya, then adding a dressing of lime juice, fish sauce, dried shrimp, nam prik peppers, garlic, and possibly some crushed peanuts. Som tom is served on a bed of lettuce, and only the most cruel foreign adaptations feature the dreaded carrot.
