Muu phad phrik khing


This popular favorite, in which pork and lengths of long bean are stir-fried with a wonderful, sweet-hot phrik khing (chili and ginger) sauce is so common in Thailand's markets and stalls that it's easy to neglect to recognize it for the masterpiece it is. The crunchy beans and tender pieces of pork share the pot with a very distinctive, thick sauce that is flavored with ginger, chili, and palm sugar. It can also be made with pieces of fried fish replacing the pork.
