Gaeng lueang
Gaeng lueang is a kind of heated-up southern version of gaeng som. Often it is so heated-up, in fact, that it rates as one of the most brutal in the national repertoire, a trip straight to hell for those unused to Thai-style culinary firepower. But a few samplings are all that are needed to cultivate a taste, and finally a craving for it. It is then that its sour bite, meaty chunks of fresh fish, and crunchy slices or segments of bamboo have the opportunity to register on the palate, and the dish reveals itself as one of Thailand's true regional masterpieces.
