Roles of fish juice
Kimchi with fish juice was only
for richer people or noble class in the old times. Fish juice was an
expensive delicacy and kimchi with it was also considered a luxury.
This was especially true in the inlands where seafood is easily available.
With the development of modern transportation and fish juice being
better available, kimchi with it became popular too.
But why did they put fish juice in kimchi when it was hard to get it?
Fish juice, which is also a kind of processed food, accelerates the
fermentation of kimchi and helps the formation of free amino acid. This
enhances the savory taste of kimchi, and provides more of the essential
amino acid.
