Why hotter kimchi tastes better?
People who try kimchi for the first time in their life would decide that 
kimchi is too hot before they can think of the savor. The hotness may 
be the one outstanding flavor over the rest of it.
Koreans prefer the hot taste which is plain painful for foreigners. Why? 
Koreans tend to dislike too sweet or greasy food. They feel 
uncomfortable when they have eaten such food. But with hot food, they 
would say "cool" or "nice." This makes them to look for cool kimchi 
sauce after they have eaten greasy food.
The feeling comes from the deep-rooted diet, but it has a scientific 
ground as well. A component in 
chili called "capsicine" has been 
found to accelerate metabolism to use up the fat, preventing its 
accumulation in body. Also it stimulates the appetite and lessens the 
need of salt. This is why food with 
chili tastes good even when salt is added less. It is, then, ideal to add 
chili to kimchi which is a kind of pickle.
