When did we first make kimchi?
Kimchi is a kind of food which does not last very long. Historical study
has to, naturally, rely on the written materials. We can find records of
fermented food in Korea as early as the Age of the Three Dynasties (in
the seventh century).
In the book, the History of the Three Dynasties, written in 1145,
there is a record of foods served in the wedding feasts of the King
Shinmun (ruled between 681 and 692), which include the word
hae. The word means "pickling," which can be interpreted as
collectively referring to kimchi family and salted fish. We do not know
exactly what it was, but considering other records in China and Japan it
probably was a kind of simple pickled food like cucumber pickle.
