Fresh Cabbage Unfermented Kimchi



Got-chorri, unfermented kimchi, is made without a fermenting process. Add this kimchi to your dining table after long winter to stimulate the appetite with its fresh green cabbages.



Materials(makes for four) and Precooking


500g (1.1 pound) spring cabbage
1 cucumber
coarse salt
1/2 binding young scallion
3 red chilies
1 bulb garlic
1/2 chunk ginger
3 spoons ground red chili
2 spoons shrimp juice, boiled, with the solid part filtered out
a small amount of salt, sugar
spring cabbage wash in flowing water and salt lightly. Rinse and cut into 4cm (1 1/2 inch) pieces.
cucumber wash and clean. Cut at slanted angles.
young scallion clean and wash. Cut into 4cm pieces.
red chili remove the seeds and slice into fine 4cm strips.
garlic and ginger clean and wash. Mince.
  1. Some of the materials and most of the wares actually needed are not included in the materials list, assuming they are readily available in any home.
  2. Metric values are approximated into pounds and inches, as they are not absolutes.

Cooking
  1. Seasoning; Soak the ground red chili with the shrimp juice. Mix the red chili with minced garlic and ginger. Flavor with salt and sugar.
  2. Mix the seasoning gently with the spring cabbage, cucumber and young scallion.
