Wild Rocambole Kimchi



Wild rocambole is a plant which sprouts in early spring, heralding the season with its aroma. People lose their appetite when the long and hard winter is almost over. With its pungent aroma and flavor, wild rocambole salad or kimchi can restore their appetite. Adding a small amount of sugar can ease the pungent taste.



Materials(makes for four) and Precooking


1kg (2.2 pounds) wild rocambole
1/4 cup salt
1/2 cup ground red chili
1/2 cup shrimp juice
2 sheaths scallion
1 bulb garlic
1 chunk ginger
5 red chilies
1 spoon sugar
3 spoons sesame seeds
wild rocambole clean wash without removing the root parts. Salt lightly.
shrimp juice gather up the solid part and mince.
scallion clean and cut at slanted angles.
garlic and ginger clean and wash. Mince.
red chili slice into halves. After removing the seeds, cut into fine strips.
  1. Some of the materials and most of the wares actually needed are not included in the materials list, assuming they are readily available in any home.
  2. Metric values are approximated into pounds and inches, as they are not absolutes.

Cooking
  1. Rinse well the salted rocambole and drain.
  2. Mix shrimp juice, ground red chili, scallion, garlic, ginger and sugar. Add rocambole, red chili and sesame seeds to the mixture and mix well.
