Chinese Cabbage Got-chorri



Got-chorri is a term that refers to any kind of kimchi which is seasoned but unfermented, whereas the rest of kimchi needs a period of fermenting. Cabbage Got-chorri is made with strip-torn leaves of Chinese cabbage and feels very fresh. Not much fish juice is added for preserving the fresh feeling. Seasoning is also reduced to minimal amount.



Materials(makes for four) and Precooking


1/4 head Chinese cabbage
5 spoons coarse salt
2 red chilies
1/3 binding young scallion
1/4 cup ground red chili
2 spoons minced scallion
1 spoon minced garlic
1/2 spoon minced ginger
a small amount of shrimp juice
1 spoon sesame seeds
1 spoon sesame seed oil
2 spoons sugar
cabbage remove the outer leaves and part in four quarters. Salt for 1 hour. Rinse and drain. Tear into long strips.
young scallion clean and wash. Cut into 3 or 4cm (1 1/5 to 1 1/2 inch) pieces.
red chili remove the seeds and slice into fine strips.
shrimp juice gather up the solid part and mince.
  1. Some of the materials and most of the wares actually needed are not included in the materials list, assuming they are readily available in any home.
  2. Metric values are approximated into pounds and inches, as they are not absolutes.

Cooking
  1. Seasoning; Soak ground red chili in warm water and drain. Mix it with minced garlic, ginger, scallion, shrimp juice and red chili.
  2. Mix the strips of cabbage with the seasoning.
  3. Add a little soy sauce when it tastes flat. Lastly, add sugar, sesame seeds and sesame seed oil and knead.
